Chicken Parmesan Omelette

Ingredients:

  • 2 eggs
  • ½ cup milk
  • A handful of shredded parmesan
  • 2 chicken tenderloins (cut into thin strips)
  • Red chilli sliced
  • 2 green onions sliced
  • 2 tbspns olive oil

Procedure:

-In a mixing bowl crack two eggs, add some milk and whisk.

-Heat a non-stick grill pan and grill chicken strips until they are white and half cooked.

-Now heat a non-stick frying pan, spray some oil on it and when it is medium hot pour egg mixture onto it. Move the pan and make the omelette round.

-When it starts to change colour sprinkle cheese, grilled chicken, chillies and spring onion. Fold it and flip the side.

-Take it onto a plate and serve hot with toasted wholemeal bread.

Ingredients:

  • 2 cups chickpeas (soak overnight)
  • 2 onion sliced
  • ½ cup oil
  • ½ cup ghee
  • 1 tspn chaat masala
  • A pinch full of bicarbonate soda
  • Salt to taste
  • 1 tspn cumin seeds
  • 1 tspn cumin powder
  • Some red chilli powder
  • 1½ tbspn garam masala
  • 1 tbspn ginger garlic paste
  • 4 tbspns lemon juice
  • 2 green cardamoms
  • A pinch of sugar

Procedure:

-In a pressure cooker put 4 cups of water and soaked chickpeas and boil for around 15 minutes.

-Now add all the spices and bicarbonate of soda and cook covered for 45 minutes.

-Heat oil and fry cardamom in it. Add onion and fry until its golden brown. Add boiled chickpeas with water and mix. Add lemon juice and chaat masala and cook for 15 minutes.

-Garnish with some green chillies and coriander.

-Serve hot with puris or naan.

Ingredients:

  • 1 cup milk
  • 1 cup self raising flour
  • 1 egg
  • Some oil spray/ butter (for greasing the pan)

FOR TOPPING

  • Ice cream
  • Maple syrup
  • Whipped butter
  • Berries
  • Banana

Procedure:

FOR PANCAKE BATTER:

-Combine everything (milk, flour and egg) in a mixing bowl and whisk until its lump less.

FOR PANCAKES

-Take a non-stick frying pan and grease it with some oil or butter, pour a ladle full of pancake batter and spread it in circular motion until it is 1cm thick.

-Let it cook on low heat until it starts getting bubbly on the side facing you.

-Flip it and after 15 seconds take it out on a plate.

-Repeat the same with the rest of the batter.

-Stack them on a plate and serve with anything you like.

Mexican Omelette

This is my dad’s recipe. I just tried it and it turned out awesome, do try this and start your day with a perfect treat …..

Ingredients:

FOR CHICKEN

  • 1 chicken breast/ thigh/ schnitzel/ 250 gms boneless chicken (sliced/ diced)
  • 3 tbspns soy sauce
  • 2 tbspns chilli sauce or hot sauce
  • Some salt
  • Some coarsely milled black pepper
  • A pinch of white pepper
  • A pinch of paprika
  • ½ tspn garlic paste

FOR EGGS

  • 6 eggs
  • ¼ cup milk
  • Some salt to season

FOR OMELETTE

  • 1 spring onion chopped
  • 1 tomato chopped
  • 2 tbspns capsicum salsa
  • 1 green chilli chopped
  • 1 capsicum chopped
  • Some canned champignons chopped
  • A scoop butter/ 4 tbspns olive oil
  • Some cheddar cheese
  • Some oregano

Procedure:

-Marinate chicken in all the ingredients given for chicken for about 30 minutes. Meanwhile cut all the vegetables and combine and whisk eggs, milk and salt in mixing bowl.

-In a frying pan heat oil and fry chicken. When it begins to change its colour, add salsa sauce, and all the other vegetables. Reserve some capsicum for topping.

-Cook and cook covered until the tomatoes lose their stiffness. Now add eggs and let the mixture settle for about a minute. Now gradually mix. When the eggs are cooked and little bit runny, transfer them to a circular baking pan (spring form pan, preferred).

-Top it with some cheese, oregano and capsicum and bake in a preheated oven (180 degrees Celsius) until the cheese is melted and a bit golden in color.

-Take it out and let it rest for about 2 minutes. Remove the spring of the pan and serve hot with toasted multi grain bread.

Soojhi Halwa (Semolina Sweet)

Soojhi halwa is a pakistani delicacy which is widely served with pooris (fried bread) and parathas in breakfast. This is a popular dish of Lahore and people over there are crazy about it on weekends and other holidays. It is also very popular during the Month of Ramadan as it is very energetic, filling and nutritious but if you are on diet please dont eat it, it is very fattening, but trying this lavish dish once a month does not make any difference…… Enjoy!

Ingredients:

FOR HALWA

  • 1 cup soojhi/ semolina
  • Few slices of coconut (thin slices)
  • 6 – 8 sultanas (kishmish)
  • 1 cup desi ghee

FOR SHEERA/ SUGAR SYRUP

  • Few strands of saffron
  • 1 cup sugar
  • 2 cups of water
  • 4 – 5 green cardamom

FOR GARNISHING

  • Few almonds, pistachios and sliced coconut

Procedure:

-Melt ghee and fry sultanas until they are puffed and dark in colour. (do not burn them).

-Add semolina/ soojhi and stir fry it until the soojhi is dark in colour. Do not left it unattended because soojhi get black very quickly.

-Now strain and ad sheera (sugar syrup) to it and mix well.

-When halwa is of rite consistency dish it out and garnish with some slivered almonds and other nuts.

-Serve hot with pooris, parathas or as a sweet dish.

Ingredients:

  • 1 kg chicken mincemeat
  • 2 chopped tomatoes
  • 2 – 4 green chillies sliced
  • ½ cup chopped coriander
  • ½ cup olive oil
  • Some salt
  • 1 tspn black pepper (cracked)
  • 1 tspn red chilli powder
  • 2 tbspns yogurt
  • 1 tspn turmeric
  • 1 tspn cumin seeds
  • 1 tspn garam masala
  • 1 tspn crushed garlic
  • 1 tspn crushed ginger
  • 1 tbspn ginger julienne
  • 1 tspn coriander powder

Procedure:

-Heat oil, fry crushed ginger and garlic. Fry chicken mince until it is white. Stir constantly on medium heat. With the cooking spoon break the mincemeat chunk into small pieces.

-Add all the spices, tomatoes and yogurt.

-Mix well.

-Now cook it covered on medium heat until the water is evaporated.

-Mix well and add lemon juice, green chilllies, ginger julienne and coriander.

-Serve hot with toasted white bread or parathas.
