Grilled Salmon with Pickles & Salad

Surprise your loved one this NYE! ….Going to city with friends and watching fireworks, drinking all night and doing stupid activities cannot match an outdoor dinner with your loved one, candles, flowers, chocolates, chilled champagne or wine and a lovely home made dinner followed by a sexy, indulging dessert while watching the stars, kissing each other at midnight and making a promise to be together next year and rest of the life…..

Its just amazing….. I am giving you the dinner idea, for rest use your own creativity…….. 🙂 but do make them feel special, you dont know what next year brings……

Ingredients:

  • 2 salmon cutlets (lrg size)
  • Some salt and cracked pepper
  • 1 tbspn lemon juice
  • ½ tspn mustard
  • 1 clove garlic (chopped fine)
  • 1 tspn chopped dill
  • 1 tbspn olive oil
  • A splash of olive oil (for cooking)

FOR PICKLES

  • Any garden salad
  • Lemon wedges (very important)
  • Gerkins
  • Olives
  • Pickled chillies
  • Pickled turnips

Procedure:

-Pat the fillets dry with the paper towel.

-In a bowl, mix lemon juice, salt, pepper, oil, garlic, dill and mustard, apply on the fillets and keep aside for 30 mins.

-Meanwhile you can arrange some pickles and greens onto the serving dish.

-Now heat the grill pan, drizzle some oil and place the fillets on it. After 1 minute reduce the heat to medium. Cook 5 – 7 minutes per side depending on the thickness of the fillet. Flip the side only once.

-Now as the fish is cooked, it will be flaky as well so lift it out of the pan very carefully and put it on the plate you just decorated with greens and pickles.

-Serve immediately.

Grilled Salmon & Grilled Shrimps with Cucumber – Caper Sauce

Very easy, very quick and fancy…….. I love it!

Ingredients:

  • 2 x 400gms salmon fillets
  • 250 gms tail prawns
  • Some salt
  • Some cracked black pepper
  • Some red chilli flakes
  • Some olive oil

CUCUMBER CAPER SAUCE

  • 2 cups Greek yogurt
  • 2 Lebanese cucumbers (deseeded and cut into small pieces)
  • ½ tspn chopped dill
  • 2 tbspns capers
  • ¼ tspn garlic powder
  • Some salt
  • Some pepper
  • ½ lemon squeezed

Procedure:

-In a mixing bowl, combine everything for sauce and mix.

-Refrigerate until needed.

-Season the salmon fillets with everything given above. Heat the grill pan, drizzle some olive oil and place the skin side down of the fillets. Cook 10 minutes per side on low – medium heat.

-Drizzle some more olive oil on the grill pan and grill prawns on 5 minutes per side.

-Take out everything on the plate and serve with a dollop of sauce.

-Enjoy!

Smoked Salmon Pizza

My favourite pizza when I go to La Porchetta …..

I like the aromatic taste of smoked salmon combined with salty capers and red onion on cheese pizza base………

Ingredients:

  • One pizza base
  • 100 gms smoked salmon
  • 3 tbspns marinated caper berries
  • 1 cup freshly sliced mozzarella
  • 1 red onion cut into thick rings
  • 3 tbspns authentic classic pure tomato pizza sauce (no herbs or garlic added)
  • 1 tbspn olive oil (to brush on the sides of the crust)

Procedure:

-Prepare the pizza base on the baking pizza tray.

-Brush the edges with olive oil and spread the tomato paste on the base.

-Put some mozzarella cheese and bake for 20 mins or until the top is bubbly and golden brown in a preheated oven (180 degrees Celsius).

-Take out and put smoked salmon slices, capers and red onions on it and serve.

Grilled Salmon with Sauteed Mushrooms and Baby Spinach

A good choice for lite, healthy, quick, easy and full filling dinner …..

Ingredients:

  • 2 salmon fillets with skin
  • Some salt
  • Some red chilli flakes
  • 1 tbspn lemon juice
  • Some olive oil

FOR SAUTEED MUSHROOMS AND BABY SPINACH

  • 2 cups baby spinach
  • 2 cups sliced mushrooms
  • 2 tomatoes chopped with seeds
  • 2 tspns oil/ some butter
  • 1 tspn Italian herb mix (parsley, oregano, thyme, onion powder & garlic powder)

Procedure:

-Combine chilli flakes, salt and lemon juice and apply on salmon fillets. Keep aside for 10 minutes.

-Heat grill pan and grill the salmon for about 4 minutes per side on medium heat.

-Take it out onto your serving dish.

-Heat oil in a skillet and fry mushrooms until they are a bit cooked.

-Add spinach and tomatoes along with the herbs. Mix, toss and stir.

-Serve on the side of salmon fillets.

Salmon with Apple Caper Salad

This is my favorite recipe for lite dinner, I like the flavor of Salmon, its different from other fish plus capers add an extra hit to it and olives of course, makes it more rich in flavor and health………

Ingredients:

  • 2 salmon tail fillets
  • 1 tbspn red chilli flakes
  • Some salt
  • ½ lemon squeezed
  • 2 tbspns olive oil

FOR SALAD

  • 1 cup green stuffed olives
  • 1 tbspn baby capers
  • 1 cup sliced cabbage
  • 1 cup julienned apple
  • 1 cucumber sliced
  • Some red chilli flakes
  • ½ lemon squeezed

Procedure:

-Heat the grill pan and place the fillets on it with the skin side down.

-Let it freckle and crackle on low heat for about 5 minutes.

-Meanwhile, in a small bowl mix lemon juice, olive oil, salt and red chilli flakes together.

-Now turn the side of the fish and apply the lemon mixture with silicon brush.

-Let it cook for 5 minutes. Then flip and apply rest of the mixture on the other side with the silicon brush.

-Take it out onto the plate with apple cabbage salad.

FOR SALAD

-Combine all the vegetables in a salad mixer and mix. Take it out in a bowl and prepare the dressing by combining red chilli flakes and lemon juice.

-Pour the dressing on the salad and serve with any grilled fish (specially Salmon).

Crisp Skinned Salmon with Greek Salad

Ingredients:

  • 2 salmon fillets (with skin)
  • Some salt
  • 2 tbspns lemon juice
  • 1 tbspn olive oil

FOR GREEK SALAD

Greek Salad Recipe

Procedure:

-Place salmon fillets on a plate and season with some salt. Make a mixture of oil and lemon juice and apply on the fillets.

-Take a grilled pan, place the fillets on it and then turn on the flame. (place the fillets, skin down, on a cold grill pan)

-Let the fillets warm up with the pan, this will stop the skin from bubbling and cracking.

-Cook for 2 minutes per side.

-Take a serving plate, put a generous serving of Greek Salad and place the fillet on the side with your greens.

-Serve.
