Mattar Paneer (Peas And Home Made Ricotta In Creamy Tomato Sauce)(Restaurant Style)

Matar Paneer is housewife’s style of romance with green peas…. Try this creamy tomato sauce based curry dish and enjoy the real taste of this vegetarian Indian delight…

Ingredients:

  • 500 gms of diced paneer
  • 2 cups boiled green peas
  • 2 medium onions chopped
  • 2 medium sized tomatoes chopped
  • ½ tspn turmeric powder
  • 1 tspn chilli powder
  • ½ tspn cumin powder
  • ½ tspn coriander powder
  • 1 tspn ginger and garlic paste
  • 4 – 5 pcs of raw cashew nuts
  • ¼ cup olive oil
  • 1 tbspn butter
  • Some water
  • ½ cup cream
  • Some salt
  • Some green chillies chopped
  • Some fresh coriander leaves
  • ½ tspn cumin seeds
  • A pinch of fenugreek leaves
  • 2 cloves
  • 2 cardamom
  • 1 pc of cinnamon stick
  • 1 small bay leaf

Procedure:

-Fry onions and cashew nuts for 2 minutes and add a bit of salt along with ginger garlic paste.

-When onion leaves the raw flavor, add turmeric and tomatoes. Cook the mixture on low heat.

-Put this in blender and blend. Add a bit of water if needed and blend this mixture into fine paste.

-Heat some oil in the vessel and add cardamom, bay leaf, cinnamon and cloves. Fry for 30 seconds and add the blended paste in it. After simmering for about 2 minutes on medium heat add peas and let the sauce simmer again for 2 minutes. Not add all the other spices and mix well.

-After 2 minutes add cheese and cumin seeds and garnish with green chillies and coriander leaves.

-Serve hot with nan bread or chapattis and enjoy.

Outcome:

Tasty Mattar paneer is ready to serve.

-Add 4 – 5 pcs of cashew nuts, no more no less otherwise your sauce will not come out to the rite consistency.

Ingredients:

  • 2 chicken breasts (boneless and skinless)
  • 3 – 4 scallions or green onions (2 sliced diagonally, 2 lengthways)
  • 4 green chillies sliced diagonally
  • 1 tspn crushed black pepper
  • Some salt
  • 2 cups chicken broth
  • 4 – 6 tbspn vinegar
  • 4 – 6 tbspn soy sauce
  • 1 ½ tbspns corn flour mixed with water
  • 4 tbspns olive oil
  • 1 garlic clove crushed
  • Some unsalted cashew nuts
  • 1 lemon squeezed

Procedure:

-Cut chicken into strips.

-Heat oil and stir fry chicken strips, cashew nuts and garlic in it. When chicken starts changing its color add salt, sauces and broth. Let it cook on medium heat for 10 minutes.

-Now add vegetables and cook for another 2 minutes.

-Add corn flour and water mixture for thickening with constant stirring.

-Add lemon juice and black pepper at the end just before serving.

Outcome:

Tasty spring onion curry is ready to serve.

Chocolate Ganache’ Cake

Ingredients:

  • 1 ½ cup all-purpose flour
  • 1 tspn baking powder
  • 1 cup sugar
  • ¼ cup soft butter
  • 1 egg
  • 2 tbspns yogurt/ sour cream
  • Some butter for greasing the pan
  • A handful of chocolate chips
  • 1 tbspn good vanilla essence
  • A pinch of coffee
  • 2 tbspn cocoa powder
  • 1/2 cup milk

FOR GANACHE’

  • 100 – 150 gms dark chocolate or cooking chocolate
  • 1 cup heavy cream
  • 1 tbspn honey

Procedure:

-Preheat oven to 175 degrees Celsius.

-In a bowl beat sugar and butter for few seconds, crack an egg into it and whisk.

-Add vanilla, coffee, cocoa powder, milk and sour cream and mix well.

-Stir in a tspn of baking powder to all-purpose flour and introduce the dry ingredients to the mixture and beat well.

-Add chocolate chips and stir.

-Grease a round cake pan, maybe 7 inches one and pour the mixture into it.

-Bake for 20 – 30 minutes. Check with a toothpick if it is done. (place it on oven’s middle rack)

-Take it out and let I rest for 10 minutes.

-Very carefully turn it over into a plate, or remove its sides if using the other cake pan.

-Now for ganache’ break the cooking chocolate into small pieces and place them in a deep mixing bowl along with honey. Heat the cream in non-stick sauce pan and pour over the chocolate with constant stirring.

-The chocolate will start melting and mixing and so as honey.

-Put this mixture aside for 10 minutes to cool down. Pour it over the cake and spread well.

-Refrigerate for minimum 2 hours and serve.

Outcome:

Tasty and as easy as 1, 2, 3 rich chocolate cake is ready to serve.

-If the cake starts burning from the top while baking, cover it with aluminum foil.

-Must refrigerate for 2 hrs before serving.

Ingredients:

VEGETABLES

  • 1 cup boiled peas
  • 1 cup chopped carrots
  • ½ cup capsicum (sliced)
  • 2 sprigs of scallions

FOR RICE

  • 1 tspn black pepper
  • 1 ½ cups rice
  • Salt
  • ½ tspn Chinese salt
  • 8 tbspns soy sauce
  • 4 tbspn vinegar
  • 4 eggs well beaten
  • 4 tbspn oil

Procedure:

-Soak rice in deep water for 30 minutes and boil them. (don’t let them lose their shape)

-Crack 4 eggs in a bowl and whisk.

-Heat 4 tbspns of olive oil and fry eggs with constant stirring.

-Add all the sliced and chopped vegetables plus all the seasonings and sauces and stir well.

-After 2 minutes of stirring, add rice and mix well.

-Scoop some rice in a plate and serve hot alone or with curry.

Outcome:

Tasty and lite vegetable egg fried rice is ready to serve.

  • 3 eggs
  • A pinch of fresh ground black pepper
  • ½ cup cream
  • 1 tspn butter

Procedure:

-In  a non stick saucepan, melt butter and add cream and let it get warm on medium heat for 1 minute.

-Crack 3 eggs in a bowl and whisk them.

-When butter starts separating from the cream add eggs and start mixing with a wooden spoon until its half cooked. Add black pepper and after 5 seconds scoop it out on lightly toasted bread slice. Serve with a piece of grilled tomato.

Outcome:

Fluffy and creamy scrambled eggs are ready to serve.

  • 2 chicken breasts
  • Salt to taste
  • Some paprika
  • A pinch of carom seeds
  • 6 tbspns vinegar
  • 2 tbspn olive oil
  • A pinch of garlic powder/ ¼ tspn garlic paste
  • 1 tspn black pepper

FOR ROLL

  • 2 fresh Lebanese breads
  • Some lettuce
  • Some onions
  • Some tomatoes
  • Some jalapenos
  • Some grated cheddar cheese
  • Some cabbage
  • Some carrots
  • Some parsley
  • Some cucumber
  • Some black pepper

ANY 3 SAUCES

  • Some tomato sauce
  • Some hummus
  • Some sour cream
  • Some chilli sauce
  • Some mayonnaise
  • Some vinegar
  • Some lemon juice
  • Some yogurt

Procedure:

-Cut chicken breasts into strips and marinade them in all other ingredients given for chicken. Keep aside for 10 minutes.

-Heat a pan and cook the chicken on low heat until its tender and juicy. Do not cook it to dry.

-Warm Lebanese bread and place the chicken on it. Now add salad of your choice and drizzle some sauces of your choice.

-Fold and wrap in aluminium foil to avoid mess.

-Eat.

Outcome:

Tasty kebabs are ready to serve.
