Chicken Spring Rolls

Spring rolls is I think one of the most favorite and famous snacks around the world which is like liked by everyone and comes with different fillings and sizes. Try my version and I am sure you will like the crispy fried rolls filled with crunchy vegetables and seasoned to perfection chicken ❤

Ingredients:

  • 24 spring roll sheets
  • Oil for frying
  • Flour and water slurry/ 1 egg + 4 tbspns water (for sealing the rolls)

FILLING

  • 1 tbspn oil
  • 2 tbspns soy sauce
  • 1 tbspn hot sauce
  • Salt and cracked black pepper to taste
  • 1 tbspn chicken salt/ 1 tspn ajinomoto
  • 2 carrots (peeled and grated)
  • 3 springs of green onion (sliced)
  • 1 capsicum (sliced thin)
  • 2 cloves garlic (minced)
  • ½ cabbage (sliced fine)
  • 2 chicken breasts boiled and shredded (boiled in salt, pepper, 2 tbspns soy sauce and 1 cup water)

Method:

  • Boil the chicken and shred it with hands.
  • Heat oil in a wok and add garlic. Fry until it is translucent and add all the veggies. Stir fry for 5 minutes adding all the spices and sauces and remove from flame. Transfer it into a deep mixing bowl and add chicken. Mix well.
  • I fried the veggies for only 5 minutes to avoid soggy filling. I like my spring roll filling to be crunchy and cooked at the same time.
  • Now fill in the roll sheets and seal the edges with the slurry. Refrigerate the rolls for 30 mins to 1 hr prior to frying.
  • Heat oil to 190 degrees Celsius in the fryer and fry rolls in batches for 5 minutes per batch.
  • Serve hot with any sauce of your choice.
  • To freeze the rolls, keep them in snap seal or freezer bag until you need them. You can freeze up to 3 months and the taste will be the same.

Chicken Kebab Roll

Ingredients:

FOR CHICKEN

  • 2 chicken breasts
  • Salt to taste
  • Some paprika
  • A pinch of carom seeds
  • 6 tbspns vinegar
  • 2 tbspn olive oil
  • A pinch of garlic powder/ ¼ tspn garlic paste
  • 1 tspn black pepper

FOR ROLL

  • 2 fresh Lebanese breads
  • Some lettuce
  • Some onions
  • Some tomatoes
  • Some jalapenos
  • Some grated cheddar cheese
  • Some cabbage
  • Some carrots
  • Some parsley
  • Some cucumber
  • Some black pepper

ANY 3 SAUCES

  • Some tomato sauce
  • Some hummus
  • Some sour cream
  • Some chilli sauce
  • Some mayonnaise
  • Some vinegar
  • Some lemon juice
  • Some yogurt

Procedure:

-Cut chicken breasts into strips and marinade them in all other ingredients given for chicken. Keep aside for 10 minutes.

-Heat a pan and cook the chicken on low heat until its tender and juicy. Do not cook it to dry.

-Warm Lebanese bread and place the chicken on it. Now add salad of your choice and drizzle some sauces of your choice.

-Fold and wrap in aluminium foil to avoid mess.

-Eat.

Outcome:

Tasty kebabs are ready to serve.

Ya! These rolls are one of my specialities and whenever they are made in Ayesha’s Kitchen (My Kitchen), people
really appreciate and enjoy them and my family is just in love with them. Whenever I make them with tea
or with soup, he realy enjoys eating them, so you people! do try them and enjoy …

Ingredients:

FOR FILLING:

  • 1 boiled breast shredded
  • 1 large potato boiled and mashed
  • 2 green chillies chopped
  • Some oregano
  • 1 tbspns chopped Italian parsley
  • Salt
  • Black pepper
  • ½ cup grated cheddar cheese

FOR ROLLS:

  • 12 Pastry sheets
  • Oil For deep Frying
  • Some Flour and water

Procedure:

-Assemble all the things in a bowl and mix.

-Take one pastry sheet and apply this mixture on all of its sides.

-Place some Filling on one side of this pastry sheet and roll, make sure no end is left open. Do same with left over Filling and pastry sheets.

-Keep in Freezer For 30 minutes and when they are Firm, deep Fry them in hot oil.

-When they are golden brown take them out and serve hot with sour cream or tomato ketchup.

Outcome:

Very tasty and very cheesy rolls are ready to be served.

-Make sure roll is closed From all the sides; it is not open or tore.

Vegetable Cheese Rolls

Ingredients:

FOR FILLING:

  • 2 large boiled potatoes (mashed)
  • ½ cup boiled carrots small diced
  • ½ cup boiled peas
  • Salt to taste
  • ¼ tspn chicken powder
  • ½ tspn red chilli powder
  • ¼ tspn garam masala
  • ¼ tspn coriander powder
  • A pinch of black pepper
  • Some cumin seeds (zeera)
  • 2 green chillies chopped
  • 1 tspn green coriander chopped
  • ¼ cup grated cheddar cheese or cottage cheese

FOR ROLLS:

  • 12 pastry sheets
  • Some Flour with water
  • Oil For deep Frying

Procedure:

-Assemble all the things in a bowl and mix them.

-Your Filling is ready.

-Now mix some Flour in water and make a paste. Avoid lumps.

-Take one pastry sheet and apply this Flour paste on all of its Four sides. Place some Filling on one side of the sheet and roll. Make sure no end is open.

-Heat oil and deep Fry it. Do the same with other pastry sheets and Filling.

Outcome:

Serve them hot with tea and tomato sauce and enjoy these perfect pure Indian vegetable rolls.

-You can add cottage cheese For the real taste of paneer or you can add cheddar cheese if you want some cheesey taste.
