Ingredients:

  • 750 gms peeled tailed prawns (with tails)
  • 1 cup rice flour
  • Some salt
  • Some red chilli flakes
  • 1 tbspn lemon zest
  • Vegetable oil for deep frying

Procedure:

-Heat oil.

-Wash and pat dry prawns. Apply some salt.

-In a shallow dish mix rice flour with lemon zest and red chilli flakes. Toss and coat prawns in this mixture and deep fry for 3 – 4 minutes in 4 batches.

-Take out and serve hot with aioli dip or your favourite seafood dip, tartar sauce.

Cantonese Shrimp Toast

Ingredients:

  • 200gms peeled, deveined prawns (raw)
  • 1 tbspn corn flour
  • Some salt
  • Some paprika
  • Some black pepper
  • Some cracked chilli
  • Some chopped Thai chilllies
  • 2 tbspns parsley/ coriander
  • 1 tspn sesame oil/ any other oil
  • 1 tspn vinegar
  • 3 white bread slices (without sides, cut into 4 triangles each)
  • Oil for frying

Procedure:

-Chop off shrimp tails and dispose them off.

-Dice the prawns until it is almost a paste. Add all other ingredients except bread and mix well.

-Spread the shrimp paste of toasts.

-In a 3 quart pan, fill the pan up to 1/3 full with vegetable oil. Remember, when you are frying, you must not fill the pan more than half; otherwise, the oil will overflow during frying and trust me, that’s a very bad thing to have.

-The temperature is the key when frying. Using a candy thermometer, check to make sure the oil is heated up to 300 F. If you fry the toasts with oil that’s hotter than this, then they will burn. If you fry with oil that’s colder, then the toasts will be too greasy as they will soak up too much oil during frying.

-When the oil reaches 300 F, drop in the toasts. Try not to be greedy and fry only a few toasts at a time so they have room to “swim” around in the oil.

-Fry each toast for one minute or until golden brown.

-Take them out and serve hot with tartar sauce.

Serving: 

This will make 12 shrimp toasts.

Prawn Biryani

Prawn Biryani (Jheenga Biryani) is ultimate don’t you think so???

Ingredients:

  • 1 kg prawns peeled and cooked*
  • 2 cups rice
  • 2 cardamom pods
  • 2 big cardamoms
  • 1 inch cinnamon stick
  • ½ onions chopped
  • 1 tomato chopped
  • 1 red chilli chopped
  • Some salt
  • Some red chilli powder (OPTIONAL)
  • ¼ tspn turmeric powder
  • ½ tspn coriander powder
  • ½ tspn cumin powder
  • A pinch of cumin seeds
  • 1 curry leaf
  • 2 black peppercorns
  • 2 tbspns Fresh coriander chopped
  • Few drops of yellow Food colour
  • ½ cup water

Procedure:

-Soak rice in water.

-Heat oil and add cardamom stuff, cinnamon, cumin seeds and curry leaf. When they begin to splatter add onion along with some salt and Fry until they lose their stiffness. Now add prawns and stir Fry them.

-Let them cook in their own water. When this mixture begins to dry add chopped tomato and other spices and herbs and mix. Add water whenever required.

-When prawns are nicely cooked remove From heat.

-Boil nearly a litre or 2 of water. Add soaked rice and when they are 90 % cooked drain them.

-In a thick bottomed pan,take half of the boiled rice a make layer then place a layer of cooked prawns and then again a layer of rice. At the end add very Few drops of yellow Food colour and cover the pan.

-Cook it For 5 – 10 minutes on very low heat. Make sure they do not stick to the bottom of utensil.

-Now dish them and serve hot with a sprig of Fresh green coriander.

Outcome:

Tasty and lovely, odourless prawn Biryani or Jheenga* Biryani is ready to be served.

Tips:

-Make sure your prawns are nicely cooked.

-You can adjust seasoning according to your taste.

-Peeled and cooked prawns are of pink colour and they are easily available Frozen in market.

Prawn Pizza

Prawn Pizza is gorgeous Isn’t it ???

Ingredients:

  • 1 thin pizza base/ dough maker’s pizza base
  • 10 – 20 cooked peeled prawns*
  • 4 tbspns pizza sauce
  • 1 tspn oregano
  • ¼ tspn Fresh cracked black pepper
  • 6 – 8 cherry tomatoes
  • ½ cup tasty cheddar cheese
  • ½ cup mozzarella
  • 2 tbspns olive oil

Procedure:

-Preheat oven to 200 degrees Celsius.

-Prepare a pizza base, apple olive oil, pizza sauce and cheese.

-Place prawns and cherry tomatoes and top them with some black pepper and oregano.

-Bake For 20 minutes in a preheated oven on 200 degrees Celsius.

-Slice and serve.

Outcome:

Lovely prawn pizza with tangy cherry tomatoes is ready to serve.
