8 button mushrooms
8 large buds of broccoli
A pinch of dried oregano
½ tspn basil
½ cup olive oil
-In a bowl, mix olive oil and herbs together, add some salt and keep aside.
-Wash vegetables and pat them with a dry, clean paper towel. With a sharp knife cut eggplant and onion into thick slices, capsicum into thick slashes, potatoes into dices and leave mushrooms and broccoli buds as they are.
-Weave these vegetables onto the bamboo skewers. Place them on hot grill and when they are hot apply the olive oil mixture on them with the help of pastry brush.
-Turn often and when they are good enough to eat, serve hot.
Tasty and fat free grilled vegetables are ready to serve.
-Don’t use skewers for eggplant and potatoes; place them on the grill directly.
