  • 1 chicken skinless, cut into 4 pieces (2 legs and thigh pieces and 2 breast and wings pieces)
  • 4 tbspns vinegar
  • Some salt
  • 1 tbspn red chilli powder
  • 1 tspn red chilli flakes
  • 1 tspn turmeric
  • 1 tbspn ginger paste
  • 1 tspn chicken salt
  • 1 tbspn garlic paste
  • 2 green chillies crushed
  • ½ tspn coriander powder
  • ½ tspn carom seeds (ajwain)
  • ½ tspn cumin powder
  • 1 tspn chaat masala
  • 2 tbspns lemon juice
  • ½ cup water
  • 2 tbspns oil


-In a bowl, combine all the spices with vinegar and make a thick paste. Add ginger, garlic and crushed green chillies.

-Make cuts on the chicken pieces and apply this mixture on the pieces. Keep aside for 30 – 45 minute.

-Now heat oil in a pan and stir fry these pieces for about 10 minutes. Add ½ cup of water and cook covered on low heat for about 40 minutes without any disturbance.

-Meanwhile you can make mattar pulao or channa pulao to serve with chicken.

-When the chicken is tender, cooked and ready take it out, sprinkle some lemon juice and serve hot with mattar pulao.

  • 1 whole chicken skinless (1.5 – 2 kgs)
  • 1 litre oil (for deep drying)
  • 1 tspn chaat masala
  • 4 tbspns ghee


  • 1 cup lemon juice
  • 1 tbspn garlic paste
  • 1 tbspn ginger paste
  • Salt to taste
  • 1 tbspn red chilli flakes
  • 1 tspn cumin powder
  • 1 tspn star aniseed powder
  • 2 tbspns garam masala
  • 1 tbspn turmeric
  • 1 tspn sugar
  • 1 tspn carom seeds
  • 1 tspn chaat masala


-Wash and dry the chicken. Place it onto a large shallow dish and with a sharp knife make deep cuts on legs, thighs and breasts.

-In a bowl combine all the spices, lemon juice, ginger and garlic paste and mix. Apply this mixture on the chicken. Massage and keep aside for 1 hr.

-In a deep convention pan heat 2 tbspns oil and place the chicken in it. Pour over all the remaining marinade juices and cook covered on low heat for 20 minutes or until the chicken is tender.

-Heat oil in a wok, add 4 tbspns ghee and deep fry chicken until its brown and crispy.

-Take it out from the oil, sprinkle some chaat masala and serve hot with naan, kachumar salad and mint raita or potato chips.

Grilled Whole Chicken

Grilled whole chicken is a very tasty and a very delicious whole chicken recipe which is very low Fat and a hunger buster. Do try this and let me know your remarks …


  • 1 whole chicken skinned
  • 1 cup yogurt
  • ½ cup soy sauce
  • 1 tbspn salt
  • 2 tbspns black pepper
  • 1 tbspn Chinese salt
  • ½ tspn chicken powder
  • 4 tbspns olive oil
  • 4 – 8 tbspns nandos peri dip hot or medium
  • 2 tbspns lemon juice


-In a bowl, prepare a marinade For the chicken. Combine yogurt, soy sauce, salt, Chinese salt, black pepper and chicken powder. Pour this mixture over the chicken and apply nicely.

-Refrigerate For 2 days and 2 nights.

-Place it in a baking dish and drizzle some lemon juice on it.

-Preheat oven to 220 degrees Celsius.

-Bake this chicken For 1 hour and 30 minutes on 220 degrees Celsius.

-Take it out and apply some peri dip on it and place it on hot grill. After 10 minutes apply olive oil and then again grill For 5 minutes.


Take it out and serve hot with Fried, lemon, etc.

This will serve 4 persons easily.

Pesto Chicken

Pesto Chicken is a very tasty and easy-to-make chicken and it is ideal For weight watchers + patients. A perfect dinner For cold winter nights …


  • 1 chicken size 16 skinless
  • ¼ cup vinegar


  • ¼ cup olive oil
  • 2 big cloves of garlic
  • 4 green chillies
  • Some salt
  • Some Chinese salt
  • Some black pepper
  • 4 tbspns yogurt


  • 2 medium sized potatoes
  • 8 French beans / green beans
  • 2 mushrooms
  • 4 heads of broccoli
  • ½ cup peas
  • 1 carrot


-Wash chicken thoroughly and apply some vinegar on it. Keep aside For some time, minimum 4 hours and then wash again.

-Pat with a clean kitchen towel. Make some deep cuts in breasts and legs.

-In a blender, put all the ingredients of pesto and blend. Now apply this on chicken with your hands. Use your Fingers to apply in cuts.

-Refrigerate over a night.

-Wash and peel potatoes and carrots, trim off the ends of green beans, slice mushrooms and other vegetables.

-In a baking tray, place whole chicken and vegetables and pour the marinade all over. Bake in a preheated oven For an hour or more at 220 degrees Celsius.

-Hot sizzling chicken is ready to be served.


Tasty and different pesto Chicken is ready to be served.



-Apply nicely.


This will serve 6 persons.
