A very easy and basic recipes for fluffy, soft and yummy pancakes….. not at all time consuming, very quick and fancy…..

Ingredients:

  • 1 cup self-rising flour
  • 1 ¼ cup whole milk
  • 1 egg
  • Some butter
  • Some bananas
  • Some strawberries
  • Some maple syrup

Procedure:

-In a mixing bowl, combine milk, flour and egg and whisk until everything is smooth.

-Heat a flat griddle, spray with non-stick spray and pour a ladle full of batter. Let it expand on its own. 1 ladle equals to 1 pancake.

-When it starts getting bubbly on the side flip it over and after 30 – 45 seconds flip it on to a plate. Do the same with rest of the batter.

-Drizzle some maple syrup and serve with fruits and butter.

Ingredients

  • 2 cups (250g) plain flour
  • 1 teaspoon bicarb soda
  • pinch salt
  • 115g butter
  • 115g dark brown soft sugar
  • 2 eggs, beaten
  • 500g (3 – 4 large bananas) mashed overripe bananas
  • 200 gms chopped walnuts

FOR MAPLE BUTTER

  • 100 gms Melted butter
  • 100 gms maple syrup

Procedure:

-Preheat the oven to 180 degrees C. Lightly grease and line 24 cup muffin tray.

-In a large bowl, combine flour, bicarb soda and salt.

-In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas and chopped walnuts until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour mixture into prepared loaf tin.

-Bake in preheated oven for 15 – 25 minutes, until a knife inserted into the muffins comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack.

-For butter mix in all the ingredients given for maple butter and glaze the hot muffins with it.

Banana Bread (LEGENDARY)

Banana bread…….. What comes in your mind when you hear “Banana Bread”?

Monkies, Bananas, Sweet, Cinnamon, Walnuts, Warmth, mmmmmmmm yummy….. that’s everything coming in my mind rite now…..

My home is filled with banana and cinnamon fragrance and my banana bread is just out of the oven resting on the bench top waiting for me to slice it and enjoy it with a cup of steaming hot cappuccino.

I don’t like keeping things waiting, meanwhile I enjoy my treat, here is what you have to do next to get the feeling I am getting rite now….

Ingredients:

  • 1 ¾ cup All Purpose Flour
  • 1 cup raw Sugar
  • 1 Stick of Unsalted Butter at room temperature
  • 4 Ripe Bananas, lightly mashed
  • ½ tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 Eggs
  • 2 Tbsp Whole Milk
  • ½ tsp Vanilla Extract
  • A handful of chopped walnuts

Method:

-Preheat your oven to 176 degrees Celsius.

-Grease a 9’ by 5’ loaf pan and line the bottom with parchment paper.

-In the bowl of an electric mixer fitted with a paddle attachment, cream together the butter and sugar. Add the eggs and whisk to combine. Add the mashed bananas and vanilla and mix to combine.

-Add the flour, cinnamon, baking powder, baking soda, walnuts and salt and mix together until just combined. DO NOT OVERMIX!! Add milk wile mixing in the dry ingredients.

-Pour batter into the prepared loaf pan and bake for 1 hour. At the 50 minute mark test it by inserting a toothpick in the center and if it comes out really wet than let it go until 1 hour and 10 minutes, if it comes out with a little wet batter than cook it for only 1 hour.

-When ready, let it cool for about 20 minutes.

-Slice and smear with butter so you can feel like you are in heaven!

TO STORE

To store, simply wrap tightly in aluminum foil and pop it in the fridge, whenever in the mood for a piece just slice away and stick in the microwave for 20 seconds. Smear with the maple butter and you will think that it just came out of the oven. It’s a yummy thing to have on hand for last minute breakfast, or after school snack or just simply reward yourself whenever in the mood!

Ingredients:

  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 ¼ cups sugar
  • ½  cup vegetable oil
  • 1 ½ cups coarsely mashed very ripe bananas (3 large)
  • 2 tablespoons yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups walnuts, toasted and chopped

FOR GARNISH AND TOPPING

  • 1 cup icing sugar
  • 3 dollops of cream cheese
  • 1 tbspn sour cream
  • Some walnuts

Procedure:

-Preheat oven to 350F/175°C. Butter 1 (9- by 5- by 3-inch) metal loaf pan, then dust with flour, knocking out excess.

-Sift together the flour, baking soda, cinnamon, and salt into a bowl.

-Beat together eggs and sugar in bowl of electric mixer at medium-high speed until very thick and pale and mixture forms a ribbon when beater is lifted, about 10 minutes. Reduce speed to low and add oil in a slow stream, mixing, then mix in bananas, yogurt, and vanilla. Remove bowl from mixer and fold in flour mixture and walnuts gently but thoroughly.

-Pour the batter into the 19 cm round greased spring form pan, spreading evenly, and bake in middle of oven until golden brown and a wooden pick or skewer comes out clean, 1 to 1 1/4 hours.

-Cool for 10 minutes, then open the spring form.

-Mix in cream cheese, sour cream and icing sugar together. Mash and mix.

-Now with a piping bag decorate this cream on the cake and garnish with chopped walnuts.

Banana Crème Caramel

Ingredients:

  • 1 unfilled sponge/ 1 plain cake
  • 1 market bought crème caramel (make according to the instructions given on the back of the pack)
  • 300 ml thickened cream
  • 1 large banana peeled and sliced
  • 1 tbspn brown sugar
  • Some chopped dark chocolate

Procedure:

-In a deep serving dish, lay a layer of plain cake and pour over warm – hot crème caramel on top of it. Keep aside for 10 minutes and sprinkle some brown sugar and the caramel syrup in crème caramel packaging.

-Pour fresh cream on it and then some chocolate pieces.

-Refrigerate for 3 hours and serve.

Choco Pinenana

A nice tropical summer refreshment with chocolate chips …..

Ingredients:

  • 24 ice cubes
  • 250 gms milk chocolate/ dark chocolate
  • 500 ml pineapple juice
  • 1 banana peeled

Procedure:

Put all the ingredients in the blender and blend until everything is mixed and chopped.

Pour in 4 glasses and serve.
