My New Year Eve’s Recipe : Twin Chicken Steaks With Mushroom Sauce And Grilled Vegetables

A lovely, lite and a romantic dinner for two. Enjoy!

CHICKEN STEAK:

Ingredients:

  • 1 whole chicken steak (skinless)
  • 6 tbspns vinegar
  • 2 tbspns olive oil
  • ½ tspn cracked black pepper
  • Some salt
  • Some cracked dried red chillies
  • ¼ cup sun dried tomatoes

Procedure:

-In a blender add all the ingredients except chicken and blend it to a fine paste.

-Make shallow gashes on chicken breasts and pour over this mixture on it.

-Marinade for 30 minutes.

-Heat the grill pan and place the marinated chicken piece on it. Turn occasionally. Grill until its well done.

-Take it out in the serving dish.

MUSHROOM SAUCE

Ingredients:

  • 4 – 6 raw mushrooms (chopped)
  • ½ tspn minced garlic
  • ½ cup of chicken stock
  • Some cracked black pepper
  • Some salt
  • 1 full tbspn unsalted butter
  • 1 tbspn cream
  • some cornflour + water (for thickening)
  • Few sprigs of Italian parsley (chopped fine) (optional)

Procedure:

-Melt butter in a saucepan and add chopped garlic. When it becomes translucent add chopped mushrooms and other seasonings. Stir fry for a minute and add chicken stock.

-Let it boil and add cornflour mixture. Stir and add cream. Mix well and pour over the steak.

GRILLED VEGETABLES:

Ingredients:

  • 2 potatoes sliced thickly
  • 4 – 6 tbspns olive oil
  • Some salt
  • Cracked black pepper
  • Some Dried basil
  • 2 tomatoes sliced thickly
  • 2 mushrooms cut into halves
  • 3 – 4 broccoli buds
  • 4 sun dried tomato slices

Procedure:

-Wash and cut vegetables according to the instructions given. Add some olive oil and herbs and spices and toss.

-Heat the grill pan and place all of them on it. Turn occasionally until well done.

(If potatoes are not cooked then: 1. Cut them and add some olive oil and place them in a deep bowl. 2. Heat in microwave oven for 3 minutes and then place them on hot grill to give the grilling texture)

-Place them on the serving dish with chicken.

POTATO CREAMS:

  • 2 potatoes
  • ¼ tspn unsalted butter
  • 2 tbspns running cream

Procedure:

-Wash potatoes and don’t take off their skins. Glaze them with some butter and place them in a bowl.

-Heat for 2 – 4 minutes or until done in microwave oven.

-Take them out and allow to cool for some time.

-Drill it with some sharp thing and make a hole; I usually use the end of tea spoon.

-Place them on one side of the serving dish and pour some cream in the wholes. Don’t let them overflow.

Outcome:

Marvelous New year eve’s dinner is ready for 2. Enjoy!

Tips:

-Use the end of spoon to make the whole in potatoes. Add 1 tbspn of cream in each one of them.

-Cook chicken breast well.

Ingredients:

FOR EGGS:

  • 2 eggs
  • 2 tbspns olive oil

FOR SAUSAGE:

  • 1 Sausage (Chicken or Beef or Lamb)
  • Some olive oil

FOR TOASTS:

  • 2 white or bran bread slices
  • Some butter

FOR CRISP BEEF:

  • 2 Slices of Hunter Beef or corn Beef

FOR BEANS

  • 1 canned white beans or kidney beans
  • 2 tbspns yogurt
  • 1 tspn olive oil
  • Some salt and red pepper

Procedure:

-For eggs, Fry eggs in 2 tbspns of olive oil and keep them aside in a plate.

-Preheat oven to 180 degrees Celsius and grill sausage + Beef slices and drizzle with some olive oil. Grill them until they are done.

-Combine salt, pepper, yogurt and beans in a bowl and mix.

-Heat oil and add this bean mixture into it. Let it simmer on low heat For 2 minutes and then immediately scoop them in the plate.

-Lightly Toast bread slices and softly apply some butter on them. Place them with all the stuff and serve hot.

Outcome:

Tasty English Breakfast is ready to be served, Serve it with grilled tomato.

Ingredients:

FOR KOFTAS

  • ½ kg chicken/lamb/ beef mincemeat
  • Some salt
  • ¼ tspn turmeric powder
  • 4 – 8 dried red chillies (even 12 if you want really spicy)
  • 1 tbspn dried coriander whole
  • A small (1 cm) pc. Of cinnamon stick
  • ½ tspn nigella seeds
  • ¼ tspn carom seeds
  • 1 green cardamom pod
  • A pinch of garam masala powder
  • 4 – 6 hard boiled eggs
  • Oil for frying

FOR CURRY

  • ¼ cup oil
  • An onion chopped
  • A tomato chopped
  • ½ lemon squeezed
  • Salt to taste (keep in mind, meatballs also have salt in them)
  • ½ tspn red chilli powder
  • 1 dried red chilli
  • 1 lemon squeezed
  • ½ tspn funnel seeds (saunf) (powdered)
  • ¼ tspn nigella seeds
  • ½ tspn cumin seeds
  • 2 – 4 dried curry leaves
  • 1 big green chilli shopped
  • Few coriander leaves chopped
  • ¼ tspn methi dana
  • ½ tspn dry whole coriander
  • 2 – 4 cracked black peppercorns
  • Some water
  • 3 tbspns yogurt

Procedure:

-Combine all the dry spices given for meatballs in a spice blender and make a fine powder.

-Add this powder to mincemeat and mix well, use food processor if needed.

-Now very carefully, take some mincemeat and make it into egg sized balls. Now coat this mincemeat around boiled egg and deep fry in hot oil.

-When its golden brown in colour take it out and keep aside.

-Do the same with the remaining eggs and mincemeat.

-Now for curry, heat oil and add curry leaves, cumin seeds, cracked coriander and dried red chilli. When they begin to splatter add onions. Cook for some time and then add all the spices except nigella seeds, saunf and methi dana.

-Blend nigella seeds, saunf and methi dana in spice blender to make fine powder. Keep it aside.

-Now add tomatoes in the curry and mix well until they lose their stiffness, cook them on low heat.

-Now add water and let it simmer. Add yogurt, powdered masala and lemon juice and let it simmer for some time. Add fried koftas and with a spoon pour over the gravy on it.

-Cook on low heat for 2 minutes and then garnish with coriander leaves and green chillies and serve hot with chapattis.

Outcome:

Tasty nargisi koftas are ready to serve.

-I like these koftas with simmered curry, if you want to make a bit gravy kind of thing, add 1 cup of water.

Ingredients:

  • 1 chicken size 20 skinned

FOR PORTUGUESE SAUCE

  • ½ cup chilli garlic sauce
  • ¼ cup mayonnaise
  • ¼ cup tomato sauce
  • ¼ cup tomato purree
  • ½ tspn dill
  •  ¼ cup chopped celery
  • 2 tbspns capers
  • 3 tbspns chopped onions
  • 2 cloves of garlic
  • ½ tspn thyme
  • 2 tbspns stuffed green olives
  • ½ tspn Tabasco sauce
  • 2 tbspns worchestershire sauce
  • 1 tspn seasoned instant tenderizer

Procedure:

-Wash and pat chicken with a kitchen towel. Now Either divide it into 4 pieces or do Frogging. The process of Flattening chicken like quails is called Frogging. This is done by cutting the chicken From the breast joint and by straightening the legs.

-Place your chicken in a shallow tray.

-Now to prepare sauce, combine all ingredients in a blender. Blend on high speed For about 5 minutes.

-Pour this mixture all over the chicken and keep it aside For 60 minutes.

-Grill it on charcoal grill For about 30 minutes each side or until done. Turn Occasionally.

Outcome:

Serve this tasty Portuguese style chicken with rice or with pita bread.

  • 2 cups of gram Flour
  • ¾ cup water
  • Salt to taste
  • 1 tbspn red chilli powder
  • ½ tspn turmeric powder
  • ½ tspn cumin seeds
  • 1 potato sliced
  • ½ egg plant sliced
  • 1 – 2 green chillies sliced
  • Oil For Frying
  • ½ tspn cracked dry coriander
  • ½ onion sliced

Procedure:

-Mix all the ingredients given except oil and mix well.

-Keep aside For 20 – 30 minutes.

-Heat oil. Now take a tbspn of this mixture and Fry, try to use your hands to make Pakoras.

-Take out on an absorbent paper and serve hot.

Outcome:

Tasty potato eggplant Pakoras are ready to be served.

Ingredients:

  • 1 chicken, 12 pieces with skin

FOR MARINATION

  • 2 cups yogurt
  • 2 tbspns milk
  • Some salt
  • Some red pepper Flakes
  • ¼ tspn dill tips
  • 1 tspn cracked black pepper

FOR CRUMBS

  • 1 cup bread crumbs
  • 1 cup Flour
  • 1 tbspn corn Flour
  • Some salt
  • 1 tspn cracked black pepper
  • ½ tspn red pepper Flakes
  • ½ tspn chicken powder
  • A pinch of garlic salt (OPTIONAL)
  • A pinch of onion salt (OPTIONAL)
  • Oil For deep Frying

Procedure:

-Combine all the things given For the marination. Add chicken and keep aside For 10 hours.

-Combine all the things given For Crumbs and mix well.

-Heat oil in a deep Fryer.

-Now take one piece out of the buttermilk mixture, coat well with crumbs and Fry on medium heat For 15 minutes/ side.

-Do the same with others.

-When they are golden Brown, take them out on an absorbent paper and serve immediately.

Outcome:

Tasty same to same KFC original recipe chicken pieces are ready to be served.
