Pina Colada

Ingredients:

  • 1 large can Coconut milk
  • 1 ltr. Golden circle pineapple juice
  • 1 cup crushed ice
  • Some whipped cream
  • Some chopped pineapple
  • Some shredded coconut (dried/ fresh)

Procedure:

-Combine coconut milk, pineapple juice and crushed ice in a cocktail mixing jug and mix.

-Take 4 cocktail glasses and fill ¾ of each one of them with the drink.

-Put some whipped cream on top, garnish with some pineapple chunks and shredded coconut and serve.

Chicken Meatball Spaghetti

Ingredients:

FOR MEATBALLS

  • ½ kg chicken mincemeat
  • 1 tspn fresh parsley
  • 1 tspn chopped garlic
  • 2 tbspns bread crumbs
  • ½ tspn salt/ chicken salt/ chicken stock powder

FOR SAUCE

  • 1 jar Napolitano sauce OR Homemade Napolitano sauce

For Home made Sauce:

  • 1 tbspn extra virgin olive oil
  • 1 shallot chopped
  • 2 cloves garlic, minced
  • 2 large sprigs fresh thyme
  • 800g to 1 kg tinned tomatoes
  • 2 fresh tomatoes chopped
  • ½ capsicum chopped
  • 1 can champignons (sliced)
  • Some salt and pepper
  • ¼ tspn parsley
  • ¼ tspn oregano
  • 1 green chilli chopped
  • Some cayenne pepper

FOR PASTA

  • 1 pack No. 5 spaghetti
  • Water for boiling
  • Some freshly grated sharp parmesan cheese (for garnishing)
  • Some fresh/ dried parsley chopped (for garnishing)

Procedure:

-To make the Napoli sauce: Heat oil in a heavy-bottomed saucepan over medium-high heat. Add onion and garlic and sauté for 2 minutes, then add thyme and tomatoes and bring to the simmer.

-Simmer very gently uncovered over medium-low heat stirring occasionally for 30 minutes or until the tomatoes have broken down and the sauce has thickened. Add a little water during the cooking process if the sauce thickens too much.

-Remove and discard the thyme stems and season to taste with salt and pepper and add other herbs, spices and vegetables.

-While the sauce is simmering, bring a large pot of salted water to the boil. Now it’s time to make the meatballs. Combine the chicken, breadcrumbs, parsley, Dijon mustard and other ingredients in a large mixing bowl and season with salt and pepper.

-Using your hands, gently mix until just blended. Be careful not to over mix the meat as it will toughen it up.

-Form the mixture into 12 – 18  meatballs, dipping your hands in a bowl of cold water to stop the chicken from sticking.

-Heat the oil in a large heavy-bottomed frying pan over medium heat.

-Cook the meatballs until golden brown all over, about 2 minutes.

-Using a slotted spoon, transfer the meatballs to the tomato sauce and simmer gently until the meatballs are cooked through, about 5 minutes.

-Meanwhile, add the spaghetti to the boiling water and cook according to the packet directions until al denté, stirring occasionally to prevent sticking.

-With a slotted spoon take out the meatballs from the sauce.

-Drain the spaghetti and toss the pasta with some of the Napoli sauce, season to taste with salt and pepper, and divide the pasta between four serving bowls. Divide the meatballs and remaining tomato sauce evenly between the four bowls of pasta.

-Serving suggestion: Sprinkle the grated parmesan cheese on top and serve.

Ingredients:

  • A bunch of fresh green coriander
  • 1 kg fresh natural style yogurt
  • Some salt
  • 1 green chilli

Procedure:

Take a good quality marble mortar and pestle and crush coriander and green chilli to fine paste. Now add salt and mix. Stir in yogurt. Pour the whole mixture in a gravy boat or any other bowl. Garnish with some coriander leaves and serve as a condiment.

Ingredients:

  • 3.5 cups basmati rice (soak for 20 minutes in lukewarm water)
  • 1 can boiled chickpeas (discard the water and keep the chickpeas)
  • ¼ cup oil/ ghee
  • 1 onion sliced
  • 1 tspn crushed ginger
  • 1 tspn sliced ginger
  • 2 – 4 cloves
  • 2 black cardamoms
  • A piece of cinnamon
  • 4 black peppercorns
  • 1 bay leaf
  • 6 ¾ cups water
  • Salt to taste
  • Chicken powder (OPTIONAL)

Procedure:

-Heat oil in a non-stick pan and fry onion, garam masala (peppercorns, cloves, cinnamon, cardamom and bay leaf) and ginger paste until they are brown.

-Add chickpeas and stir for a minute and add water in it. Cook covered for 10 minutes and then add salt and soaked rice.

-Let it cook on high medium heat for 5 minutes or until the rice begins to boil.

-Cover it with the lid and cook on very low heat until there is no water left in the pot.

-Serve hot with roasts, shaami kabab and fried chicken.

Ingredients:

FOR CHICKEN

  • 1 chicken breast/ thigh/ schnitzel/ 250 gms boneless chicken (sliced/ diced)
  • 3 tbspns soy sauce
  • 2 tbspns chilli sauce or hot sauce
  • Some salt
  • Some coarsely milled black pepper
  • A pinch of white pepper
  • A pinch of paprika
  • ½ tspn garlic paste

FOR EGGS

  • 6 eggs
  • ¼ cup milk
  • Some salt to season

FOR OMELETTE

  • 1 spring onion chopped
  • 1 tomato chopped
  • 2 tbspns capsicum salsa
  • 1 green chilli chopped
  • 1 capsicum chopped
  • Some canned champignons chopped
  • A scoop butter/ 4 tbspns olive oil
  • Some cheddar cheese
  • Some oregano

Procedure:

-Marinate chicken in all the ingredients given for chicken for about 30 minutes. Meanwhile cut all the vegetables and combine and whisk eggs, milk and salt in mixing bowl.

-In a frying pan heat oil and fry chicken. When it begins to change its colour, add salsa sauce, and all the other vegetables. Reserve some capsicum for topping.

-Cook and cook covered until the tomatoes lose their stiffness. Now add eggs and let the mixture settle for about a minute. Now gradually mix. When the eggs are cooked and little bit runny, transfer them to a circular baking pan (spring form pan, preferred).

-Top it with some cheese, oregano and capsicum and bake in a preheated oven (180 degrees Celsius) until the cheese is melted and a bit golden in color.

-Take it out and let it rest for about 2 minutes. Remove the spring of the pan and serve hot with toasted multi grain bread.

Ingredients:

  • 1 mutton leg (2 kgs. Approx.)
  • Some salt
  • 1 tspn minced garlic
  • 1 tspn crushed ginger
  • 1 tbspn ayesha’s kitchen special garam masala
  • 1 tspn cracked black pepper
  • 1 tspn red chilli flakes
  • 1 cup yogurt
  • ½ cup lemon juice
  • 4 tbspns oil
  • Some baby potatoes (optional)

Procedure:

-Make some cuts and incisions in the meat. Combine everything except yogurt and oil in a bowl and rub this mixture on the meat.

-Keep aside for 8 hours.

-Apply yogurt and rub gently. Keep aside for 2 hours.

-Heat oil in a pressure cooker and place the marinated meat (with bone) in it. If the bone is bigger than the cooker cut it with the bone cutting knife. Add potatoes.

-Pressure cook for 6 whistles on medium heat. Remove the pressure lid carefully. If there is water then allow it to dry on medium heat otherwise carefully take out the meat and place it on a flat serving dish with potatoes on side. Garnish with some chopped coriander or parsley and serve hot with pulao or muttar pulao.
