Raan roast is one of the famous dishes of Eid – Ul – Adha in Pakistan. Eid – Ul – Adha is a Muslim festival when we sacrifice goat, lamb, camel or bull and distribute it among our relatives, family members and poor people. This is the best way of consuming meat, do try this ……
Ingredients:
- 1 mutton leg (2 kgs. Approx.)
- Some salt
- 1 tspn minced garlic
- 1 tspn crushed ginger
- 1 tbspn ayesha’s kitchen special garam masala
- 1 tspn cracked black pepper
- 1 tspn red chilli flakes
- 1 cup yogurt
- ½ cup lemon juice
- 4 tbspns oil
- Some baby potatoes (optional)
Procedure:
-Make some cuts and incisions in the meat. Combine everything except yogurt and oil in a bowl and rub this mixture on the meat.
-Keep aside for 8 hours.
-Apply yogurt and rub gently. Keep aside for 2 hours.
-Heat oil in a pressure cooker and place the marinated meat (with bone) in it. If the bone is bigger than the cooker cut it with the bone cutting knife. Add potatoes.
-Pressure cook for 6 whistles on medium heat. Remove the pressure lid carefully. If there is water then allow it to dry on medium heat otherwise carefully take out the meat and place it on a flat serving dish with potatoes on side. Garnish with some chopped coriander or parsley and serve hot with pulao or muttar pulao.
You haven’t put water in Pressure cooker ? .
Approx how long it will take for 6 whistle ?
No i have not added any water in the pressure cooker because I have put all the left over marinade and if we will add water the meat will smell.
it will take around 30 mins on low heat…..

I am in Australia and love this recepie but problem is that I dont have any pressure cooker here.could you tell me how to do that without pressure cooker.thanks
cook covered on low heat in a normal vessel for 3 hours…. add water if required…… hope that helps 🙂
How can I do it in oven
preheat to 180 degrees celsius and bake for 2 hrs covered in foil. Then 30 mins without foil in a roasting tray 🙂
good recipe for a try! but pressure cooking, it means we drying all meat juices while it shrinks the (leg/Rann) too.
second don’t we use any tenderizer?
Dont need tenderizer if using pressure cooker. Thats the point of a pressure cooker.
you are right…. but then the meat will be chewy. If you will add it, the meat will be tender and melt in mouth. Thanks 🙂
