Ayesha’s Kitchen

Ingredients:

  • 6 large potatoes boiled and peeled
  • A bunch of coriander
  • A bunch of mint
  • 4 green chillies chopped
  • Some salt
  • Some chicken salt (OPTIONAL)
  • ½ tspn cracked black pepper
  • ½ tspn red chilli
  • A pinch of white pepper
  • ½ tspn chaat masala
  • A little bit of garam masala

FOR FRYING

  • 2 eggs
  • Oil for shallow frying

Procedure:

-Mash potatoes and add everything to it.

-Mix and make small flat roundels.

-Heat oil on medium heat. Dip roundels in egg and fry until they are crisp and golden from outside.

-Serve hot with raita as an appetizer or with tea.

Cottage Style Potatoes

Ingredients:

  • A dozen of baby potatoes cut into 4 wedges each (with skin)
  • Some water to parboil
  • A scoop of butter
  • Some sour cream and spring onions to serve

Procedure:

-Boil water and add potato wedges. Boil for around 10 minutes and discard water.

-In a skillet, melt some butter and add potatoes.

-Stir fry until the wedges get a nice golden, crispy colour.

-Serve hot with sour cream and sour cream.

Malai Boti (without BBQ grill)

Malai boti is a famous barbecue dish of Pakistan. Nearly, all the barbecue restaurants in Pakistan serve this dish and people really love it. Its mild, its juicy, its lite and its healthy. I have made this in a pan because we cant use BBQs in apartments and mostly people dont have BBQ grills at home so this is the home version of this beautiful dish. Ingredients:

  • 1 kg chicken thigh fillets (cut each fillet into 4 – 5 pieces)
  • 250 gms lite sour cream
  • 1 ½ cup yogurt (sour, but not Greek)
  • Salt to taste
  • 1 tbspn red chilli powder
  • 1 tbspn crushed ginger
  • 1 tbspn crushed garlic
  • ½ tspn turmeric
  • 2 tbspn Ayesha’s kitchen special garam masala
  • 1 tspn chicken powder
  • 1 tbspn meat tenderizer/ raw papaya paste
  • 6 tbspns oil (olive oil)
  • Some charcoal for tempering

Procedure:

-Cut thigh fillets into big 4 – 5 pieces.

-Apply some meat tenderizer on them and keep aside for 10 minutes.

-Now add all the other ingredients except oil and charcoal.

-Keep aside for 4 hours.

-Heat oil in a pan (pan with lid) and add the marinated chicken in it. Cook covered on low heat for 30 minutes.

-Then remove the lid and stir cook on high heat until the moisture is evaporated and oil comes to the surface. Remove from the heat.

-Heat charcoal on naked flames. When it is hot place it on an onion peel or on a piece of aluminum foil and place it on the top of the cooked chicken.

-Drizzle some oil over the coal and cover the pan with the lid.

-After 15 minutes take out the coal and the paper. Dish out the chicken and serve hot with coriander chilli raita.

This is the fruit of my research on KFC wicked wings recipe…… This recipe tastes exactly the same…..

Chicken Wings

Ingredients:

FOR WINGS

  • 1 kg chicken wings (wingettes and drumettes)(with skin)
  • 1 tbspn red chilli paste
  • 1 tspn garlic paste
  • Some salt
  • Some red chilli powder
  • Some black pepper
  • 2 tbspns vinegar

FOR COATING

  • 1 egg
  • 1 cup corn flour

FOR CRUMBS

  • 1 cup flour
  • 1 cup bread crumbs
  • Some salt
  • Some cracked black pepper
  • Oil for frying

Procedure:

-Marinade chicken wings in the ingredients given for wings and keep aside for 12 hours.

-Now in a mixing bowl beat one egg and add corn flour to it. Mix well, avoid lumps.

-Now add marinated wings and coat well each wing.

-In a shallow dish combine the dry ingredients given for crumbs. If the bread crumbs are coarse, put them in the food processor and chop until they are very fine.

-Heat oil to 190 degrees Celsius in a deep fryer.

-Take out the wings from egg mixture and coat well with crumb mixture and fry until they are golden brown or look crispy.

-Take them out on an absorbent paper and serve hot with garlic dip or hot chilli sauce.

Chicken Sticks

This recipe is a wonderful appetizer for chicken lovers, do try this and make your day …

Ingredients:

  • 2 chicken breasts (boneless, diced)
  • ½ onions diced
  • 1 tomato diced
  • 1 capsicum diced
  • Some cherry tomatoes
  • Some salt
  • Some cracked black pepper
  • A pinch of red pepper flakes
  • A pinch of nigella seeds
  • 6 tbspns vinegar
  • 2 tbspns olive oil

Procedure:

-In a bowl mix all the spices and sauces and pour it over diced chicken.

-Mix well and keep aside for 20 minutes.

-Now on a bamboo skewer weave everything orderly and grill them.

-Serve them hot, on sticks, with some grilled mushrooms.

Outcome:

Tasty chicken sticks are ready to serve.

-Use white vinegar.

-Serve them hot.

This will serve 2 persons easily.

Garlic Bread

Garlic bread is one of the well known breads and you can Find it in any pasta shop, pizza shop or Italian cuisine. It is mouth watering tasty …

Ingredients:

  • 1 French bread loaf
  • 3 scoops of soft butter
  • 1 tspn garlic paste / 1 tspn garlic powder
  • 1 chopped spring onion
  • Salt and black pepper to season

Procedure:

-Cut French bread loaf diagonally leaving 1 inch distance.

-Mix butter, salt, pepper, spring onion and garlic and make soft paste.

-Apply this paste to both of the sides of French bread slices.

-Preheat oven to 160 degrees Celsius 30 minutes before baking.

-Place glazed slices on baking tray and bake For 15 minutes or until they are golden brown and crispy.

-Prepare a beautiful basket For them. Place them and immediately serve with any pasta or lasagne.

Outcome:

Tasty, hot and crispy garlic bread is ready to be served.

-Serve them immediately after baking or they will get soggy.
