Ayesha’s Kitchen Special Chicken Handi

This is my very own recipe of Chicken Handi. Chicken handi is a very famous dish of Pakistani cuisine, you can find it almost in every restaurant. It is very easy to make, do try my recipe and I am sure you are going to love it …..

Ayesha's Kitchen

Ingredients:

  • 1 ½ kg chicken breast and thigh fillets (cubed)
  • 2 large onions sliced
  • 2 large tomatoes chopped
  • 2 tbspns yogurt
  • Some salt
  • Some red chilli powder
  • 1 tbspn ginger garlic paste
  • 1 cup oil
  • 1 tbspn Ayesha’s kitchen special garam masala
  • 1 tspn turmeric
  • 1 tspn cumin powder
  • 1 tspn coriander powder
  • A bunch of fresh coriander chopped
  • 2 – 4 green chillies sliced

Procedure:
-Heat oil and fry onion with ginger garlic paste until they are red.
-Now add chicken and spices and mix well until the chicken starts changing its colour.
-Add yogurt and tomatoes and let it cook on low medium heat until the moisture evaporates and masala is formed. Remove from heat.
-Heat a charcoal piece to white. Place a 4 x 4 aluminium foil on chicken handi, then place the coal piece and drizzle some oil on it. Cover it with airtight lid. After 10 minutes, add chopped chillies and coriander. Serve hot with chapattis.

Ingredients

  • 2 potatoes (diced)
  • ½ kg mutton curry meat
  • ½ cauli flower sliced
  • 1 onion
  • 2 cloves garlic
  • 1 tbspn crushed ginger
  • Salt
  • Red chilli powder
  • ½ tspn turmeric
  • 1 tspn Ayesha’s Kitchen special garam masala
  • A bunch of coriander chopped
  • 2 tomatoes chopped
  • ½ cup oil
  • 2 cups water
  • 2 green chillies

Procedure:

-In a pressure cooker, combine meat, salt, green chillies, onion, garlic and ginger. Add water and let it cook for 4 whistles. (if NOT using pressure cooker, then boil the meat with all these things until it is tender)

-Very carefully take off the pressure lid and add oil.

-Let the water dry.

-Now add tomatoes, potatoes and cauli flower and mix.

-Simmer with constant stirring.

-Now mix in turmeric, red chilli powder and garam masala.

-Let it cook for 5 minutes.

-Garnish with some fresh coriander and serve hot with chapattis.

Ingredients:

  • 4 white bread slices (thick, toast slices)
  • 2 large size eggs
  • 4 tbspns oil/ butter
  • 4 tbspns sugar
  • ¾ cup milk

FOR TOPPING

  • Some maple syrup
  • Some berries
  • Some sliced bananas

Procedure:

-In a mixing shallow bowl, combine milk, sugar and eggs. Whisk in a way that the sugar is well incorporated with the mixture.

-Now take a bread slice, dip and soak in the egg mixture and fry in 1 tbspn of butter/ oil until it is red and gives a caramelized look from both sides.

-Flip it on a serving plate.

-Do the same with other slices. Top them with some berries, bananas and maple syrup and serve hot. You can also use ice cream, chocolate syrup, cinnamon sugar, icing sugar, vanilla sugar, apple slices etc. for the topping.

Smoky Chicken Karahi/ Karai/ Kadai

Ingredients:

  • 1 kg chicken (mix) (small pieces)
  • 2 tbspns yogurt
  • ½ lime squeezed
  • 2 tomatoes chopped
  • 2 green chillies
  • 2 tbspns crushed ginger
  • 2 cloves of garlic crushed
  • Some red chilli powder
  • A bunch of coriander (crushed)
  • Salt to taste
  • 1 tspn Ayesha’s Kitchen Special Garam Masala
  • 1 cup oil

Procedure:

-Combine crushed green chillies, ginger, garlic, coriander, salt, red chilli powder and garam masala in a bowl and mix with yogurt. Add lime juice.

-Heat oil and fry chicken until it is fried and slightly golden.

-Now add the yogurt paste and mix well for 2 minutes on high heat. Add tomatoes and let it cook covered for at least ½ hour on low medium heat.

-If the oil comes up that means it is done, otherwise cook of high heat, with constant stirring until the water evaporates and oil comes up.  Remove from heat.

-Meanwhile, put a piece of charcoal on high flame and heat it until it is white and hot.

-Now place a 4×4 piece of aluminum foil on cooked chicken and place the coal on it. Drizzle some oil and cover it with the lid.

-Keep it aside for at least 15 minutes. Serve hot with raita, salad and chapattis.

Banana Delight

Banana delight is a very easy, quick and economical dessert, specially for Summers. Do try this and dont forget to comment ……

Ingredients:

  • 1 litre banana custard (made to instructions given on the backside of the packet)
  • 1 banana flavored jelly (all set and refrigerated) (cut into cubes)
  • Few chocolate chip cookies/ some grated bittersweet chocolate
  • 2 large banana peeled and sliced
  • Some whipped cream (unsweetened)

Procedure:

-Refrigerate the ingredients for 4 hours.

-In a transparent glass bowl, lay a layer of whipped cream and place some banana slices on it.

-Pour some custard on it and then garnish it with jelly and banana slices and top it with some chopped chocolate or crumbled cookie and serve.

Classic Hamburger

This is Burger Monster’s classic recipe of Hamburgers. It is not necessary that hamburgers should have ham in them, they can be made without ham, just with some extra rich in cholesterol ingredients like fried egg, cheese, etc. but they turn out amazing. Do try my recipe and you can make it healthy by using turkey meat, low fat cheese, avocado, etc. and enjoy ……

Ingredients:

  • 4 hamburger buns
  • 4 eggs (full fried)
  • 4 tomato slices
  • 1 cup sliced lettuce
  • 1 large onion (caramelized in 4 tbspns oil)
  • 4 cheese slices
  • Some mayonnaise
  • Some classic tomato ketchup
  • 1 kg beef mincemeat
  • Some oil for grilling the patties
  • Some salt and pepper to season

Procedure:

-Divide each bun into two pieces and toast them.

-Divide the meat into 4 big balls. Heat the grill pan and grease it. Now place the ball of mincemeat on it and press it with the back of the flip spoon until it is shaped to 1 cm thick round patty. Change the sides and season each patty generously with some salt and pepper. -When they are cooked (juicy) take them out on a plate.

-Full fry the eggs separately (one for each burger).

-Heat oil and fry onion (cut into thick rings) until its red and grilled. Take it out in a plate.

-Now you have everything cooked and the burger is ready to assemble.

-Take one bottom of the bun; place some lettuce, 1 tomato slice, some caramelized onion, a cheese slice and the patty. Top it with some mayonnaise and tomato sauce and cover it with the top of the bun.

-Serve hot with chips.
